Easy 1st Birthday Cake

by Ruthie on March 4, 2008

Over the weekend I was going through a whole lot of old photos and came across some old photos of my childhood birthday parties and the wonderful cakes we had. I am a twin and spent my childhood growing up in Africa. The effort my mother went to was quite terrific. This sentimental journey has spurred me on to be a little more creative than I have in the past! I am not a great baker and my last cakes have been very safe, tasty, visually appealing and extremely easy! If my idea helps you to experience less stress at your next kid’s birthday party by all means go for it!!! :)

Quick Easy Healthy & Delicious Dinner

Here is a fantastically super new dinner I will be trying this week!
Chinese Cabbage Salad and Porcupine Chicken.
Love to know if its a hit in your family this week! :)

Chinese Cabbage Salad

1/2 chinese cabbage or Savoy cabbage, shredded
6 shallots, chopped
100g lightly roasted slivered almonds or pinenuts.
1pkt 100g Fried Noodles (plain or onion)

Dressing
1 cup white vinegar
1 cup castor sugar
1 tblsp soy sauce
2 tsp sesame oil (optional)
1 cup olive oil

Mix all ingredients of the dressing into a bowl. Stir until sugar is dissolved. Combine the cabbage, shallots & almonds in a salad bowl. Add dressing and toss to coat. Sprinkle noodles on top just before serving (otherwise they go soggy). To have as a stand alone dinner you can add shredded BBQ chicken or BBQ pork.

Porcupine Chicken

4 chicken breasts
1 egg, beaten
1/4 cup soya sauce
1 cup of crushed cornflakes

Cut chicken into thickish strips. Combine egg and soy sauce and dip chicken pieces into it. Coat with crushed cornflakes, place on a baking sheet on a baking tray and cook at 180c for 30 - 40 minutes.
