Easy Toddler Friendly Apricot Chicken Dinner

Ingredients for Easy Apricot Chicken Recipe

  • apricot halves  15oz / 425g
  • chicken thighs 1lb / 500g
  • dry onion soup mix 1 pkt

Method for Easy Apricot Chicken Recipe

  • Preheat oven to 356ºF / 180ºC
  • Place chicken in baking dish
  • Mix apricots and juice with soup mix
  • Pour over chicken and bake for 30 minutes or until baked through

This was always one of my favourites when we were growing up. I don’t remember it being so easy to make but it certainly is delicious. I love it that it is something that I can blend up (because of the juices) and use as a great meal for my babies that are on solids. It feeds all of us!
