Chicken Cacciatore

1 kg chicken thighs

2 Tbs olive oil

3 Tbs plain flour, sifted

2 15oz/425g tomatoes

2 cups chicken stock

1/2 cups white wine

3 Tbs tomato paste

1/2 tsp sugar

20 black olives, halved

2 Tbs fresh parsley, chopped

2 Tbs fresh basil, chopped

1 onion, chopped

1 tsp minced garlic

Method

•    Brown chicken, set aside and sprinkle with flour plain flour
•    Fry onion and garlic
•    Add tomatoes, chicken, stock and wine – bring to the boil and simmer for 10 minutes then add paste and sugar
•    Add olives, herbs and simmer a further 10 minutes

Pesto Potatoes & Beans

8 baby potatoes, peeled & quatered

15 beans, trimmed

4 Tbs basil pest

Method

•    Boil a pot of water then boil potatoes for 8 minutes or until just tender
•    Add beans to potatoes for the last 3 minutes of cooking the potatoes
•    Drain then stir through basil pesto

*    You can substitute the beans for asparagus.

Lemon Curd Frozen Cups

2 cups vanilla yogurt

2 cups lemon curd

Method

•    In cups or parfait glasses layer vanilla yoghurt with lemon curd
•    Repeat the process until glasses are full
•    Wait 4 hours to freeze completely

*    Decorate with a few sprinkles

Rocky Road

500 g good quality milk cooking chocolate

250 g plain biscuits, crushed

100 g marshmallows

100 g glazed cherries

Steps

•    Grease a slice tin. Line base and sides with baking paper, allowing a 2cm overhang at both long ends.
•    Crush biscuits, chop marshmallows and halve the cherries
•    Melt chocolate and stir with a metal spoon.
•    Stir through remaining ingredients
•    Pour into slice tin
•    Place in the fridge for 3 hours or until set

*    This makes a great valentines day gift wrapped in cellophane or in a lovely gift box

Ooohhh rocky road sounds divine but then I am a real chocolate fan so anything with chocolate, u really can’t go wrong.
I love that u use chicken thighs instead of breasts, I’m really not a fan of breasts but have to say I never thought to substitute them
I love lemon curd so nice to find a nyummy recipe to use it with coz it’s not quite the same on toast as it is on a spoon
