<li><span style=”color: #663333;”>Fry onion and garlic in a little oil</span></li>
<li><span style=”color: #663333;”>Add broccoli, snow peas, water, mushrooms, capsicum, bean shoots and sauce</span></li>

- potato gnocchi l 1 package
- zucchini, diced finely l 1 cup
- red capsicum, diced finely l ½ cup
- tomatoes, chopped l 1 cup
- semi dried tomatoes l ¼ cup
- pesto l ¼ cup
- pine nuts, toasted
Method for Quick Pesto Gnocchi
- Cook gnocchi according to packet
- In a pan cook zucchini, capsicum in a little oil until tender
- Add drained gnocchi to pan and stir in pesto then add tomatoes
- Top with pine nuts
- Serve with cos lettuce and Lebanese cucumber
