Quick Chicken Cacciatore

Ingredients for Chicken Cacciatore
- chicken thighs l 1kg (2lbs)
- olive oil l 1 tbs
- plain flour l 2 tbs
- can tomatoes l 425g x 1
- chicken stock l 2 cups
- white wine l ½ cup
- tomato paste l 2 tbs
- sugar l 1 tsp
- black olives l 3 tbs
- fresh basil, chopped l 2 tbs
- fresh parsley, chopped l 2 tbs
Method for Chicken Cacciatore
- Brown chicken, set aside and sprinkle with flour
- Fry onion and garlic
- Add tomatoes, chicken, stock and wine – bring to the boil and simmer for 10 minutes then add paste and sugar
- Add olives, herbs and simmer a further 10 minutes
- Serve with sliced red capsicum, cucumber, cos lettuce and warm wholegrain rolls
