Quick Chicken Cacciatore

Ingredients for Chicken Cacciatore

  • chicken thighs l  1kg (2lbs)
  • olive oil  l 1 tbs
  • plain flour l  2 tbs
  • can tomatoes l 425g x 1
  • chicken stock l 2 cups
  • white wine l ½ cup
  • tomato paste l 2 tbs
  • sugar  l 1 tsp
  • black olives l 3 tbs
  • fresh basil, chopped l 2 tbs
  • fresh parsley, chopped l 2 tbs

Method  for Chicken Cacciatore

  • Brown chicken, set aside and sprinkle with flour
  • Fry onion and garlic
  • Add tomatoes, chicken, stock and wine – bring to the boil and simmer for 10 minutes then add paste and sugar
  • Add olives, herbs and simmer a further 10 minutes
  • Serve with sliced red capsicum, cucumber, cos lettuce and warm wholegrain rolls

This recipe could easily be done in a slow cooker!
