Ingredients for One Dish Chicken

  • chicken thighs l 1kg (2lb)
  • chicken stock l 1 cup
  • onion, chopped l 1
  • button mushrooms l 220g (7 oz)
  • raw white rice l ¾ cup
  • seasoned flour l 1 cup
  • salt and pepper
  • white fish fillets l 4

    Method for One Dish Chicken

    • Preheat oven to 180ºC/356ºF
    • Coat thighs in seasoned flour
    • Brown chicken in a little oil
    • Place rice, onion, salt, pepper and stock in a greased dish then arrange chicken and mushrooms on top
    • Bake for 1 – 1 ½ hours with lid on
