Ingredients for One Dish Chicken
- chicken thighs l 1kg (2lb)
- chicken stock l 1 cup
- onion, chopped l 1
- button mushrooms l 220g (7 oz)
- raw white rice l ¾ cup
- seasoned flour l 1 cup
- salt and pepper
- white fish fillets l 4
Method for One Dish Chicken
- Preheat oven to 180ºC/356ºF
- Coat thighs in seasoned flour
- Brown chicken in a little oil
- Place rice, onion, salt, pepper and stock in a greased dish then arrange chicken and mushrooms on top
- Bake for 1 – 1 ½ hours with lid on
