<li><span style=”color: #663333;”>Fry onion and garlic in a little oil</span></li>
<li><span style=”color: #663333;”>Add broccoli, snow peas, water, mushrooms, capsicum, bean shoots and sauce</span></li>
<li><span style=”color: #663333;”>Serve with rice</span></li>

  • chicken thighs l 1 kg (2 lbs)
  • olive oil l ¼ cup
  • lime juice l ½ a lime
  • spring onions (scallions) l 2
  • cajun seasoning l 3 tsp
  • black pepper l to taste

Method for Cajun Chicken

  • Cook pasta according to packet
  • Drain and keep warm
  • Stir chopped sundried tomatoes and capsicum and red onion through pasta
  • Stir dressing through pasta
  • Serve with 12 olives and 2 Lebanese cucumbers

Remember the chicken will start to cook in the lime juice so don’t leave it to marinade.
