
INGREDIENTS
4 cups spiral pasta, cooked
2 lebanese cucumber, diced
2 mangos
1 red bell pepper, diced
2 celery stalks
1/2 radicchio lettuce
4 Tbs cider vinegar
4 Tbs olive oil
1/2 tsp sugar
METHOD
• Place ingredients into a large bowl
• Drizzle with salad dressing and toss gently
• Season with salt and cracked black pepper

This looks great! I was going to make a pasta salad this week – they’re great for lunch and my kids love eating pasta – but I was planning on the more ‘traditional’ kind. I’m going to make this one instead, now. Thanks for sharing!
