Labor Day Menu – Double Fudge Brownies

Ingredients for Double Fudge Brownies
all purpose flour 1 1/2 cups
baking powder 1/4 tsp
corn syrup* 1 1/2 Tbs
dark brown sugar 1 cups
granulated sugar 1 cups
heavy whipping cream* 1/4 cups
large eggs 4
mini chocolate chips 1 1/4 cups
powdered sugar, sifted * 1 1/2 cups
salt 1/4 tsp
unsalted butter 4 oz / 115 g
unsalted butter, softened * 5 Tbs
unsweetened cocoa powder 1/2 cups
unsweetened cocoa powder * 3 Tbs
vanilla extract 2 tsp
vanilla extract * 0.75 tsp

Method for Double Fudge Brownies

* Preheat the oven to 350 degrees and spray the baking pans with vegetable cooking spray.
* Combine the melted butter, cocoa powder, sugar, and brown sugar in a large mixing bowl.
* Gradually add the eggs, beating constantly until smooth.
* Stir in the vanilla.
* In a separate bowl, sift together the flour, baking powder, and salt.
* Gradually add the flour mixture to the egg mixture, stirring well.
* Add the chocolate chips, and stir until all the ingredients are combined.
* Divide the batter among the baking pans.
* Bake for 35/45 minutes, or until a toothpick inserted into the centre of the pan comes out with a few moist crumbs attached.
* Set the pans on the cooling racks, and allow the brownies to cool completely in the pans before frosting.
* Spread the cooled brownies with the Creamy fudge Frosting.
* Cut each pan into 25 brownies about 1½” x 1½” square.

CREAMY FUDGE FROSTING*

* Beat the butter in a mixing bowl until light and fluffy.
* Add the vanilla, cocoa powder, corn syrup and heavy whipping cream, and mix until smooth.
* Gradually add the powdered sugar, stirring constantly until the mixture is a spreading consistency.
* Add more cream if necessary.
* Pour into an airtight container and store in the refrigerator.
* Bring to room temperature and stir before frosting the brownies.
