Labor Day Menu – Texas Yellow Coleslaw

Ingredients for Texas Yellow Coleslaw
brown sugar 2 Tbs
celery seed 1/4 tsp
cider vinegar 1/4 cups
cucumber, peeled, seeded, and diced 1
green pepper, seeded and chopped 1/2
ground allspice 1/8 tsp
ground ginger 1/2 tsp
olive oil 2 Tbs
small head cabbage, coarsely chopped 1/2
small yellow onion, finely diced 1
tumeric 1/2 tsp

Method for Texas Yellow Coleslaw

* In a small saucepan, bring the vinegar, sugar, celery seed, turmeric, ginger, and allspice to a boil over medium-high heat.
* Stir in the onion, remove from the heat and let stand 5 minutes to cool.
* Meanwhile, toss the cabbage, cucumber, and green pepper together in a serving bowl.
* Whisk the olive oil into the cooled vinegar mixture until combined.
* Pour the turmeric-vinaigrette over the vegetables and toss to coat.
* Season to taste with salt and pepper and serve.
