Simple, easy and quick. Fish & Wedges are a great meal. I love to make this meal instead of buying this as a take out meal. Simply wrap each fish in a parcel of baking paper and you can have a “take out” experience for a fraction of the price.
Ingredients for Fish & Baked Wedges
cucumber, sliced 1
lemon rind, finely grated 4 Tbs
potatoes, cut into wedges 6
tomatoes, wedges 2
white fish fillets 4
Method for Fish & baked Wedges
• Preheat oven to 400ºF / 200ºC
• Mix potatoes with salt, pepper and rind
• Place on a lightly oiled try and bake for 45 minutes
• Sprinkle fish with pepper and fry fish in a non stick frying pan till brown
• Serve with tartare sauce, tomato and cucumber
