Last week we I am cooking honey Dijon chicken, roast beef, wedges & salad, salmon pasta salad, baked snapper and salsa and beef lettuce cups. All of which are new recipes to me. I love trying new dishes and as I do vary our menu from weeknight to weeknight the kids are excellent with eating their meals! This menu is perfect for toddlers. The extra boost of vitamin C fruits and vegetables in our diets really helped with our sniffles! So this week we will continue to enjoy more fresh juices.
MONDAY : Honey Dijon Chicken
TUESDAY : Roast beef, Wedges & Salad
WEDNESDAY : Salmon Pasta Salad
THURSDAY : Baked Snapper & Salsa
FRIDAY : Beef Lettuce Cups

- Fresh Grapefruit
- Freshly squeezed orange juice or apple juice

- Tabouli Salad wraps
- Tomato bruschetta

- Vitamin C Fruit Bowl {orange, melon, kiwi fruit }
- Lemon, honey and garlic drink
- Vitamin C Veggie Platter { red peppers, steamed broccoli }
- Full cream milk& pieces of cheese

- Squeeze extra juice and freeze in 4 cup portions
- Steam 2 broccoli and keep covered in the fridge
- Make extra salsa for bruschetta
