
Recipe for Potato Gratin
prepare the day before / reheat on the day
Prepare potatoes
desiree potoates 1.2kg / 2.7lbs
peel 1 – 2 mm thick slices
*Use a food processor to thinly slice potatoes quickly
Mix together
chicken stock 1 cup
pouring cream 1 cup
garlic, finely chopped 2 cloves
plain flour 1 ½ tsp
Method for Potato Gratin
Preheat oven to 170º / 338ºF
Grease a 7 cup deep baking dish
Mix potatoes and garlic together in a bowl – season to taste
Place potatoes, slightly overlapping, in layers in prepared dish
Whisk flour into a small amount of stock then stir in remaining stock and cream and pour over potatoes
Bake for 1 ½ hours
Allow to cool and then refrigerate
* Reheat on the day
* Preheat oven to 200ºC / 392ºF for 30 – 40 minutes or until golden brown
