
Recipe for Maple Roasted Vegetables
prepare vegetables the night before
Peel & Cut Vegetables
turnips, halved lengthways 2
sweet potato, chunks 2
butternut pumpkin 1
carrots 3
* Microwave chunks for 5 mins
* Line a large roasting pan with baking paper
Maple Glaze
olive oil 4 Tbs
maple syrup 4 Tbs
balsamic vinegar 2 Tbs
garlic cloves, crushed 2
*Mix and heat through in a pot for 5 minutes
Method for Maple Roasted Vegetables
Preheat oven to 220ºC / 428ºF
Spread vegetables in a single layer in pan
Toss vegetables with glaze
Roast for 1 hour turning once or until tender
