Chicken & Fried Rice

chicken-fried-riceChicken & Fried rice is another family favorite recipe that is nutritious and a meal the whole family can enjoy. With 3 serves of vegetables you can add more depending on your toddlers intake for the day. I like to use brown rice to make this extra healthy.

Ingredients for Chicken & Fried Rice

carrot, sliced 1
chicken thighs 1 lbs / 500 g
egg, lightly beaten 1
ground ginger 1/2 tsp
pineapple pieces 1 cups
red bell pepper 1
rice, cooked 4 cups
snow peas 20
soy sauce 1/4 cups
water 1/2 cups

Method for Chicken & Fried Rice

Cook chicken thighs and cut into strips
•    Heat oil in a large pan and brown egg
•    Remove and cut egg into strips
•    Stirfry broccoli, pepper, snowpeas and carrots.
•    Add rice to vegetables the stir through soy sauce
•    Add remaining ingredients and stir until heated through
