Make Ahead Picnic Lunch – Salad Tortillas

Spread a dip {hummus, cottage cheese or mashed avocado} of choice over tortillas then top with english spinach, carrot, bell peppers, tomatoes and sprouts. Roll up tightly then wrap in foil or plastic wrap. Pack into an individual container for each guest or in an airtight container for everyone. For extra picnic flair tie each wrap with a piece of string, or a ribbon that ties in with the colors of your picnic.

Make Ahead Picnic Salad – Arugula & Semi-dried Tomato Pasta Salad

Mix 3 cups of cooked penne pasta with a handful of arugula, drizzle of olive oil, a cup of chopped semidried tomatoes, dash of chilli fakes, half a cup of olives and top with crumbled fetta. Divide the salad while at the picnic or place into individual containers for each guest.

Make Ahead No Bake Picnic Dessert -Mint Fruit & Honeycomb Yogurt

Combine halved strawberries, raspberries and blueberries into a container for each guest. Bring along individual tubs of plain yogurt and honey with honeycomb. Guests can add the mint to their fruit salad and top their yogurt with delicious pieces of honey comb. Make sure you have some wipes on hand for sticky hands!

Make Ahead Picnic Baking Treats – Buttermilk & Raisin Scones

You will need – sifted 1 cup all purpose flour, sifted 1 cup wholemeal flour with bran, 1/3 cup caster sugar, 1 tablespoon baking powder, 1 teaspon of mixed spice, 1/2 cup raisins, 1 egg, 1 1/2 cups buttermilk, 1/4 cup oil {grapeseed oil is perfect}. Preheat oven to 356F / 200F. Mix dry ingredients in a bowl. In a separate bowl mix wet ingredients. Comine well the pour into patty pans. Cool before packing in your picnic basket.
