- Serve up extra salad in containers ready for Tuesdays dinner
- Marinade chicken Monday night & cook extra for burritos
- Slice extra zucchini slice and keep for lunch and BBQ
January is such a great time of year! Full of anticipation and reflection for the year ahead. We are enjoying the beach and our Granny May being here. The kids are slowly getting used to swimming in the pool and are no longer terrified. This year we really want to entertain more and make the most of this lovely BBQ weather. This weeks menu is making the most of mango season and I am trying to keep the cost of our grocery bill down by not having meat every night of the week. Hope you have a super week with your family!

Your menu this week sounds really good. I love mango, so I will definitely be trying your pasta and mango salad. I would have never thought of using mango in a salad but I am definitely going to be trying this.
Super easy – 4 ingredient Chicken Burritos
BBQ chicken, jar of pasta sauce, burritos and cheese
Shred the chicken
Place chicken in burritos and fold
Top with sauce and cheese
Place in the oven
Serve with a simple salad
Especially good for a super busy weeknight!
