ready-made thick custard 5 cups
mascarpone cheese 1 cup
sponge finger biscuits 16
sherry or orange juice 9 tbs
fresh or frozen raspberries 200g / 7oz
strawberries, sliced 16
Method for Raspberry Sponge Trifles
Beat custard and cheese until smooth
Divide a third of biscuits among 8 glasses
Sprinkle with a third of sherry
Spoon a third custard and cheese mixture over biscuits
Scatter with a third of the raspberries and strawberries
Repeat layers
Top with raspberries and strawberries
Refrigerate for 1 hour before serving
*Serve in individual tall parfait glasses
