Kid Friendly Chinese Cabbage Salad & Cornflake Chicken Dinner

Here is a fantastically super new dinner I will be trying this week!
Chinese Cabbage Salad and Porcupine Chicken.

Chinese Cabbage Salad

1/2 chinese cabbage or Savoy cabbage, shredded
6 shallots, chopped
100g lightly roasted slivered almonds or pinenuts.
1pkt 100g Fried Noodles (plain or onion)

Dressing
1 cup white vinegar
1 cup castor sugar
1 tblsp soy sauce
2 tsp sesame oil (optional)
1 cup olive oil

Mix all ingredients of the dressing into a bowl. Stir until sugar is dissolved. Combine the cabbage, shallots & almonds in a salad bowl. Add dressing and toss to coat. Sprinkle noodles on top just before serving (otherwise they go soggy). To have as a stand alone dinner you can add shredded BBQ chicken or BBQ pork.

Cornflakes Chicken

4 chicken breasts
1 egg, beaten
1/4 cup soya sauce
1 cup of crushed cornflakes

Cut chicken into thickish strips. Combine egg and soy sauce and dip chicken pieces into it. Coat with crushed cornflakes, place on a baking sheet on a baking tray and cook at 180c for 30 – 40 minutes.

Will try this one tonight, sounds like one the kids will eat without complaint.
