5 of my favorite weeknight dinners

Here are 5 are my most favorite recipes. They are easy, quick, nutritious and budget friendly! The nasi goreng or indonesian Rice is particularly close to my heart as it is an old family recipe from my husband’s Grandma. It is such a tasty recipe! Hope you can enjoy some new weeknight dinner ideas this week!


MONDAY : Egg & Bacon Baguettes

TUESDAY : Easy Apricot Chicken

WEDNESDAY : Grandma Edie’s Indonesian Rice – Nasi Goreng

THURSDAY : Kid Friendly Salmon Bake

FRIDAY : Chicken & Sesame Noodle Salad

HI Ruth,

I have used a few weeks of menu in a box now and found shopping really easy. Great to hear that you will have a fast and fresh version. Would love a low fat version ( I tend to change them to lower the fat). My only negative would be that some weeks have a lot of mince in the one week.

I agree with the “mince” comment. The main reason for this was to keep the budget down. This particular menu series was aimed at saving money “at every turn”!

I really hope you will enjoy the “Fast and Fresh series”. For most weeks there is a chicken dish, vegetarian, pasta, fish and beef recipe….coming soon!

The menu in a box is being used by my wife and all I can say is that she is shopping better and spends less time in the kitchen – and the meals are great so I am delighted about the whole concept.
