Zucchini Slice Recipe

Not many of us want to do heaps of complicated cooking during the holiday season.

Here is one of my favourite dishes to make – Easy Homemade Zucchini Slice.

Zucchini slice is a wonderfully versatile and delicious meal. Add a salad, make it for a picnic, brunch,parties & a simple supper. Every time I make this dish it goes in a flash. Hope you enjoy making it :)

INGREDIENTS

550g zucchini – finely grated and excess water squeezed out

1 medium onion, finely chopped

3 large rashers

1 cup grated tasty cheese

3/4 cup self-raising flour

Salt & pepper

4 large eggs

1/3 cup oil

Line an 18cm x 28cm baking dish or slice tin with baking paper.

METHOD

Fry bacon and onion

Combine grated zucchini, cooled onion and bacon mixture, cheese, flour, salt and pepper in a large bowl.

Mix egg and oil and then combine with other ingredients

Bake @ 180C (356F) for 45 minutes
