This recipe is an absolute favourite and can include a variety of your favourite vegetables. This soup can be frozen and is wonderful to add to other meals. For example my toddlers get this as a sauce over cous cous. They love it!
BROWN FIRST UNTIL SOFT
* 20g butter
* 1 tablespoon olive oil
* 1 brown onion, finely chopped
* 2 garlic cloves, crushed
ADD
* 1 large potato, peeled, cut into 1cm cubes
* 1 carrot, peeled, cut into 1cm cubes
* 1 zucchini, cut into 1cm cubes
* 100g green beans, trimmed, roughly chopped
AFTER 6 minutes ADD & BRING TO BOIL
* 4 cups chicken stock
* 400g can whole peeled tomatoes
* 400g can butter beans
SIMMER for 40 minutes then BLEND to desired consistency.

A dollop of homemade pesto would be yum with this!
