Here is the recipe for homemade basil pesto to go with the wonderful bean and potato side dish. By all means use store bought, however homemade pesto is quick and easy to do!
Homemade Basil Pesto.
3 cups picked basil leaves
3 cloves garlic
1/2 cup pine nuts (roasted in a dry hot pan or in the oven)
1/4 cup Parmesean, grated
1 cup olive oil
salt and pepper
Crush the garlic to a paste and process with the basil and pinenuts - slowly drizzling in the olive oil.

Basil pesto is so versatile and can be frozen in ice cube trays and used as the imagination requires. (:)

Home made basil pesto is great with a toasted french baguette, as a base for lasagne, stirred through pasta dishes.
